Dolphin Fields and Design elements

What I am trying to do is add new user fields, and have these appear on the search page, for example, organisations, universities, interests, current company, current position, former company, previous position, industry, person wants, person has, drop down status bar with fields like employee, recruiter, seeking employment, freelancer, self employed etc languages etc (see picture) as well as remove the dating aspects like sex and looking for, speed dating etc from the site, which do not apply in this instance.

On the design side I also wish to integrate a new header into the site, that runs across the whole site, change the site width to 1000 pixels and make it 3 columns. The header will have an added menu that would be at the top of the page, with the dolphin menu/submenus below our sites menu system, with the menu system that is currently right at the top of the page on dolphin at the bottom only. I also need to change the colours of the site to suit the header.
